I am all about the snacks when it comes to summertime gatherings, and today I’m sharing all about one of my favorite dips – baked fiesta bacon cheese dip.

For this gathering, I picked up Nut-Thins Original Almond and Nut-Thins Sriracha from Walmart (you can also grab some at Target). Lil Man loves anything with a kick of spice to it, so I thought the Nut-Thins Sriracha would be right up his alley. Other varieties that I’d like to try include Cheddar Cheese Nut-Thins and Pepper Jack Nut-Thins.
Nut Thins are a snack that you can feel good about, with just 130 calories per serving. They are wheat & gluten free, contain no artificial flavors or colors, and are made with real California almonds. They are pretty darn delicious too!

Nut-Thins are perfect for snacking on their own, and would also make a great addition to a cheese board. I for one, love to dip them, and their crisp texture makes them perfect for dipping into my baked fiesta bacon cheese dip.
Recipe for baked fiesta bacon cheese dip
This baked fiesta bacon cheese dip is super creamy and delicious. I’m sure that it will be a hit at any gathering you serve it at. It’s warm, gooey and just perfect for dipping Nut-Thins into. Better yet, it is really simple to make, so you don’t need a high skill level in the kitchen to recreate this delicious dip recipe.
Ingredients:
- 8oz cream cheese (softened)
- 1 cup mayonnaise
- 1 cup shredded Fiesta Blend cheese
- 1 – 2.5 oz package bacon pieces
- 1 small roma tomato (diced)
- 1 tsp chili powder
- 1 tsp fresh chives (optional)
Directions:
Step 1. Preheat oven to 350 degrees.
Step 2. Dice the tomato.
Step 3. Reserve about 1 teaspoon of the bacon bits and 2 teaspoons of the cheese. Set aside.
Step 4. Place cream cheese in a medium microwave safe bowl and cook on high for about 30 seconds to really soften it. Stir well.
Step 5. Add mayonnaise and stir well.
Step 6. Add the rest of the ingredients and stir until combined.
Step 7. Spoon into a small baking dish and sprinkle the bacon bits and cheese that you set aside over the top. Sprinkle with fresh chives.
Step 8. Bake for 20 minutes. Serve warm with Nut-Thins crackers.
This baked fiesta bacon cheese dip really is one for the books, and might quickly become the most requested recipe by your family and friends. It’s great for any time of year, and any snacking occasion. Sometimes, I even just bake half of the mixture if there are just a few of us snacking. Then I refrigerate the rest to bake later for snacking in a day or two.
