Summertime is a season for gathering and with my father in law’s birthday party coming up quickly, I’ve been pulling out some of my favorite summer salad recipes to see which ones are his party favorites. This Greek Pasta Salad recipe is one of the many that made the cut and I’m excited to share the recipe with you today. Though I have partnered with Reese for this post, as always, all opinions are my own.

This Greek pasta salad recipe is really special because it is inspired by a Greek salad that my mom always made. Of course I’ve adapted it quite a bit by adding pasta noodles, but I’ve also added in some Reese Hearts of Palm and Artichoke Hearts which really make it unique! Reese Hearts of Palm are a low cholesterol food but also rich in potassium and?Vitamin C. ?They are even Non-GMO Project Verified, which is a total plus in those of us looking for quality food, that is convenient to use.

Reese Hearts of Palm are great for use in salads, served as a main dish and even deep fried. Being from Wisconsin, I naturally love anything deep fried! There are 6 varieties to choose from, though I chose the Sliced Hearts of Palm for this recipe and they were perfect since I didn’t have to do any extra cutting! Family means everything and I always like to put a little love into the meals that I serve them. Reese Hearts of Palm helped me put more than a little “heart” into this tasty dish that my family and friends are sure to enjoy at my father in law’s birthday bash. It’s simple, delicious and best of all shelf stable so that’s one last ingredient off my last minute shopping list!

One of the best things about this Greek Pasta Salad recipe is that it involves very little effort on your part. In fact, the only thing that you actually have to cook, is the noodles! The rest is either fresh and requires just some cutting, or comes conveniently in a can.

Greek Pasta Salad Recipe
Ingredients
- 1/2 box Bow Tie pasta noodles
- 1 cucumber – sliced and halved
- 2 Roma tomatoes – diced into large chunks
- 1/2 red onion – diced into large slices
- 1 can Reese Sliced Hearts of Palm
- 1/2 can Reese Artichoke Hearts
- 1/2 cup Feta cheese
- 3 tbsp red wine vinegar
- 1/4 cup olive oil
- 2 tsp oregano
- salt and pepper to taste
Instructions
- Boil and drain noodles, place in large bowl and cool
- Mix red wine vinegar, olive oil, oregano, salt and pepper well, pour over noodles and stir well.
- Add all other ingredients, stir well and chill for 3 hours.
- Serve and enjoy!
