Hi. I?m Stacey, wife, mom of three kids, and the one
responsible for feeding my family. I?m also involved in my community, my kid’s schools, work outside the home, and have little time to figure out what’s for dinner. I?m probably just like you!
But, eating together and providing healthy meals for my family are important to me. So, every week I make time to pore over cookbooks, magazines, and the internet to plan our meals and shopping list.
It keeps us out of the drive thru lane and reduces the
craziness of an already hectic time of day. So, after 13 years of planning my family’s meals, I?m sharing them with you.
INGREDIENTS 12 oz package cheese ravioli
1 pint grape or cherry tomatoes
2 shallots, wedged
2 tablespoons olive oil
1/4 teaspoon kosher salt
1/4 teaspoon pepper
2 tablespoons balsamic vinegar
2 tablespoons fresh basil, chopped
INSTRUCTIONS Preheat oven to 425.
Place tomatoes and shallots on a foil lined baking sheet.
Toss in olive oil. Sprinkle with salt and pepper.
Roast for about 25 minutes, checking the progress after about 20.
Remove from oven when tomatoes are slightly charred and shallots are tender.
While tomatoes and shallots roast, cook the ravioli according to package directions. Keep warm.
Toss ravioli, tomatoes, and shallots with balsamic.
Plate and top with fresh basil.
