If you like fruit pizza, then you’re going to love these mini fruit pizza tarts. They’re bite sized, so they’re perfect for parties. These delicious cookie tarts are loaded with a fresh berry filling and topped with fresh berries and kiwi.
Mini fruit pizza tarts are really easy to make, and a fun treat for little kids to help with too. I like to use packaged cookie dough because it saves time. Plus, if you grab the pre-cut cookie dough, those are perfectly measured to fit inside your muffin tin! I’m always down with easy, and I know many of you like recipes that are simple too! How to make mini fruit pizza tarts
You’ll need fresh fruit and cookie dough for this recipe, but the rest of the ingredients, you likely have on hand in your pantry.
Ingredients:
- 1 package sugar cookie dough – the pre-cut ones with 24/pack are best for this
- 4 oz cream cheese, softened
- 1 Tablespoon powdered sugar
- 1/4 teaspoon Vanilla
- 6 raspberries and 6 blackberries (for frosting)
- ½ package blackberries
- ½ package raspberries
- 1 kiwi
- Cooking spray
Step 1. Preheat oven to 350 degrees.
Step 2. Spray mini muffin pan with cooking spray.
Step 3. Break apart cookie dough into 12 equal parts. Place one piece in each cavity of the muffin pan.
Step 4. Bake for 10-12 minutes.
Step 5. Remove from oven and transfer to baking rack to cool.
Step 6. Once cool, use a butter knife around the edge to lightly remove each cookie cup.
Step 7. In a mixer, blender or Ninja, add cream cheese, powdered sugar, vanilla and 12 berries.
Step 8. Mix or blend well until the texture is creamy.
Step 9. Spoon mixture into each cookie cup.
Step 10. Remove the skin from kiwi, then cut into 6 slices. Cut each slice into quarters.
Step 11. Top cookie cups with one berry and one chunk of kiwi
Step 12. Refrigerate for 1 hour and serve.
