With stores picked over, and people being encouraged to stay at home, homemade food is being made in homes across like country like we haven’t seen in decades. Some friends and I thought now would be a good time to share some of our favorite easy recipes with all of you, that you can make with simple ingredients that you likely have in your refrigerators and pantries at home. We’re calling this “Tasty Tuesdays”, and we’ll be here sharing new recipes with you every week. Today, I’m sharing an easy banana walnut muffins recipe that is one of my favorites!
Making homemade muffins is really easier than you might think, and you can use this base recipe to make practically any kind of muffins that you want. You’ll need just flour, sugar, salt, baking powder, milk, oil and an egg to make muffins at home. For these ones, you’ll add in walnuts and bananas. Some other additions to muffins that you can make at home might include blueberries, apples and cinnamon, or lemons and poppy seeds. You might also like this chocolate chip muffins with oil recipe.
Easy banana walnut muffins recipe
This recipe is great because it is simple, and because it starts with a higher heat setting, then drops down a bit, it helps to make the muffins rise a bit, rather than stay flat like many other homemade muffin recipes.
Ingredients:
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- ½ teaspoon salt
- 3 teaspoons baking powder
- 1 cup milk
- ¼ cup vegetable oil
- 1 large egg
- 1/2 cup chopped walnuts
- 1 banana, chopped
Directions:
Step 1. Preheat oven to 425 degrees.
Step 2. Line a muffin pan with 12 paper liners.
Step 3. In a large bowl, combine flour, sugar, salt and baking powder. Stir well.
Step 4. Add banana and walnuts. Mix quickly, and push mixture to the sides of the bowl.
Step 5. In a separate bowl, beat egg.
Step 6. Stir milk and oil into egg.
Step 7. Pour liquid mixture into the center of the flour mixture. Mix lightly until moistened.
Step 8. Pour batter into muffin pan.
Step 9. Drop oven temperature to 400 degrees.
Step 10. Bake muffins for 20-25 minutes until golden in color.
Step 11. Remove from oven and enjoy hot, or let them cool and eat them later.
