The weather is getting nicer and it won’t be long until we’ll have gatherings with our family and friends. I’m usually in charge of salads because everyone enjoys the ones that I bring to share at our parties. I’m always looking to try something new though so I’ve been experimenting with new salads to add to my summer menu. This Monte Cristo Salad from Red Gold is pretty darn tasty and I love that it can be a meal by itself or shared with friends at summer cook outs!
But before we get to that tasty summer recipe, I want to share my Red Gold Challenge with you and tell you all about why I choose Red Gold tomatoes every time!
First of all, you can see the difference. The Red Gold tomatoes on the left are mostly similar in size and appear nice and firm. The ones of the right are from a competing brand and the sizes vary a little more, but they also look a bit on the mushy side. When I went to cut one open, the Red Gold tomato cut nicely, right in half. It also stayed firm and round. The tomato on the right mushed the second I tried running the knife through it and mushed all the way through. I don’t know about you, but I sure know which one I’d rather eat!
Alright, now back to this Monte Cristo Salad. My favorite part of this salad (besides the deliciousness of it) is that the only cooking required is boiling a couple of eggs. That makes it a perfect salad for gatherings because you can chop everything and then put it together and toss it right before serving so it’ll be nice and fresh!
- 6 cups torn salad greens
- 2 (14.5 ounce) cans Red Gold? Petite Diced Tomatoes, drained
- 1 cup seasoned croutons
- 1/2 pound shaved smoked turkey, cut into strips
- 4 slices Swiss cheese, cut into strips
- 2 hard cooked eggs, sliced
- 1/4 cup honey Dijon salad dressing
- Combine greens, petite diced tomatoes and croutons in a large serving bowl. Add remaining ingredients and toss lightly
