Having a large family, it’s obviously more feasible for me to cook meals at home than it is for us to eat out at restaurants. Therefore, my husband and I are often looking for new recipes to try so that we’re not making the same things over and over again. We need variety in our diets, but at the same time, I’m trying to make meals that are friendly on the budget as well.
Since October is National Pasta month and pasta is pretty inexpensive, I figured we should make some new pasta meals that are wholesome and filling enough for these growing boys. I’ve found some really great pasta recipes on the Pasta Fits website and have been picking and choosing ones that I think my family might enjoy. I’m a big fan of Spinach and Artichoke Dip and so is my husband. My father in law and youngest son enjoy it as well, so I thought the Creamy Spinach & Artichoke Chicken with Orzo would be a good recipe to try.
The awesome thing about pasta recipes is that they’re usually pretty easy to make. The Creamy Spinach & Artichoke Chicken with Orzo required just a few main ingredients and was ready in less than 30 minutes. I couldn’t find the right noodles, but substituted them and they worked perfectly. I even learned how not to “sear” meat for the first time. That was interesting to say the least, when my kitchen filled with smoke and I had to scramble around opening windows. Ahh, you’ve got to love the quirks of cooking though. It made for quite an interesting day!
My family enjoyed this meal and now we’ve started looking for the next great recipe to try. Thanks to Pasta Fits, we’re finding some really great pasta recipes that are wholesome, yet quick and easy enough to make on busy weeknights. Many are paired with vegetables and beans or protein packed poultry and lean meats for that added nutritional value.
