I love fall. Everything starts to change into a buzz of excitement as the weather changes into a crispness. It’s the start of the holiday seasons, all the best people in my life have birthdays, and to me, everything is a bit more relaxed than the humidly hot summers we live in. And each year, my best friends family and mine get together and spend the day at the pumpkin patch.
Do you know the best part of pumpkins? It’s the seeds. Most people just throw them out when carving their pumpkins, but they are delicious and full of a lot of healthy benefits, like Zinc, Magnesium, Omega-3 Fats, and loads more benefits. So a little work to bake them in the oven goes a long way for your health!
Baked Pumpkin Seeds
Gut your pumpkins then separate your seeds out from the stringy orange goo as bests as possible. Then you can do one of two things: either rinse them under water to get the last pumpkin bits off or rub them with a newspaper in small batches. If you rinse them in water, lay them?flat on a baking sheet and allow them to dry overnight. Using the newspaper takes longer, butyoucan then bake your seeds immediately!
Preheat your oven to 375 degree. Toss your seeds with 1/2 to 1?tablespoon olive oil then your choice of either sea salt or cinnamon sugar! Spread in an even layer on a sheet and bake for 5 minutes. Stir and spread again, then bake an additional 8-10 minutes or until crispy and slightly browned. Allow to cool a few minutes, then enjoy!
For a more adult flavor, soak in cinnamon whisky overnight, dry one additional night, then bake in sugar! If you try or have your own favorite flavor, let me know in the comments!
