This whole year seems to just be flying by. I cannot believe that Easter is just 5 days away and I am not even close to being prepared! I literally just started basket shopping yesterday. I still need to get the egg color kits, sit down with the kids and color eggs, buy more basket stuff, plan dinner.. Ok, you get the point.
Well lucky for me, one thing that I don’t have to worry about and has already been taken care of is Easter Brunch. I’ll be making these amazing Sausage, Egg and Cheese Biscuits that Katrina shared a few months ago along with some super easy baked sides from Reser’s Main Street Bistro.
Of course, I had to try them out for myself first. So one day while the boys were at work and school, I whipped up a breakfast for my father in law and I. First, I popped the The Baked Hash Brown Casserole in the oven.

While that was cooking, I whipped up two of my famous Ham and Cheese Omelets to pair it with. I have to say, the two went together great and the Baked Hash Brown Casserole was quite delicious!
I just know the Main St. Bistro Baked Zesty Au Gratin Potatoes and Main St. Bistro Baked Scalloped Potatoes are going to go perfect with our Easter Brunch! I’m getting hungry just thinking about it!
