I was presented with a challenge this week as part of my Bread-bassador program with Arnold/Brownberry/Oroweat Bread. I was to come up with two unique recipes for National Sandwich Day (today) – one featuring ABO bread and the other ABO Sandwich Thins. Now I say “challenge” because frankly, I’m just not very creative in the sandwich department.
However, since I’m not one to just give up, I put some careful thought into it and got a little bit creative to produce two very tasty sandwiches that take no time at all to make. I hope that you enjoy them because my family sure did!
Last year, my aunt hosted a Bridal Shower Brunch for me. She created an awesome breakfast type spread with pastries, spinach quiche, fruit, chicken salad, croissants, Mimosas and punch. The food was just wonderful and the drinks were delightful! One of my favorites turned out to be the chicken salad croissant, which surprised me because I had never had chicken salad before and honestly didn’t think I would like it. I’ve been wanting the recipe since then, but just never got around to asking for it. So last week, I threw a concoction of ingredients together and turned them into a very delicious Chicken Salad that tasted about the same!
Ingredients:
- 8 slices Brownberry 100% Whole Wheat Bread
- 1 cup cooked chicken – cut into small pieces
- 1/3 cup red grapes
- 1 hard boiled egg
- 5 tbsp mayonnaise
- salt & pepper to taste
Alright, this next one isn’t quite as detailed and original, but it is good and it’s definitely healthy! This sandwich takes just minutes to make and is quire tasty too!
Ingredients:
- 1 Brownberry Multi-Grain Sandwich Thins
- 2 slices smoked turkey lunchmeat
- 2 slices honey ham lunchmeat
- lettuce leaf
- 3 slices avocado
