4th of July Cupcakes with Jell-o Frosting

For the first time since our son has been born, my husband doesn’t have to work for the 4th of July. I decided we need a fun treat to celebrate the first time we would watch fireworks together as a family in, well, ever. So, I checked out my cupboards, found had a strawberry shortcake flavor packet, some blue Jell-O, and all the other fixings to make cupcakes. I made my cupcakes from scratch, but, y’all feel free to “cheat” and use a box mix. It’s easier!

Make your cake mix, but separate out about a third of it into a new bowl. Mix in your strawberry flavoring, like the Duncan Hines Strawberry Shortcake packet I used, plus a few drops of red food coloring. Mix well and then layer or swirl the red and white into your cupcake pan. Bake as directed.

Now the fun part. Take a blue colored Jell-O mix, sugar, egg whites, and food dye and mix it in a bowl until firm peaks form. If your bowl is too warm, place over a bowl of ice. Beat the mix on high between 5 and 10 minutes.
