It took me a long time to be able to make good scrambled eggs. They should be fluffy and light, but still full of flavor and moist! Here is my recipe for the perfect scrambled eggs for a family breakfast.
Ingredients
- 3 eggs per person (I use 8 for two adults and one 2 year old)
- Cooking spray
- Milk
- 2 tsp instant plain oatmeal
- Salt and pepper to taste
Directions
- In a medium size bowl, break your eggs. Add your oatmeal and a splash of milk.
- Wisk until just frothy. Do not over mix.
- Let stand for up to five minutes.
- Spray a large non-stick skillet with your choice of cooking spray.
- Slowly pour your eggs mixture into the skillet.
- Season with salt and pepper.
- Now watch. Allow the eggs to just set. The color will get darker and the edges will not be milky.
- With a nice, large wooden spoon (this is key) skim the edges of the pan so the outside doesn’t cook and set.
- Continue to make large figure 8’s in the pan while the eggs cook. Periodically scrap the edges.
- Your eggs should cook but never set in a lump. You should start to see them fluff up and break apart as you run your spoon through them.
- Once they are no longer runny, run your spoon through them in a chopping motion.
- Serve and enjoy!
