It's Poptoberfest with Seakpak! Review Plus Giveaway {CLOSED}

During the month of October SeaPak is launching a Poptoberfest festival, on their facebook page, to celebrate families and encourage them to spend time together. SeaPak wants to help you take a vacation from your everyday routine. SeaPak will feature new polls, quizzes and even prizes each week during the duration of the celebration!

Our family had the opportunity to begin our own Poptoberfest celebration by sampling SeaPak POPcorn Fish and POPcorn Shrimp. These products can be eaten as is or used in fun, family friendly recipes and our family used them both ways.

First we tried the POPcorn fish. I was surprised by how good these were. My husband is the big fish eater in our family and the rest of us just kind of go along for the ride occasionally; we usually stick to chicken and beef as the main part of our everyday meals. But EVERYONE loved the POPcorn Fish. It had great flavor and came in a fun, easy to eat shape. These would be perfect party food, since they can easily be eaten with your fingers. Just add a dipping sauce and you have fabulous appetizer.

We were more adventurous with our POPcorn shrimp. Inspired by our love for Chinese food, I decided to put an Asian spin on our shrimp meal. You will find our recipe below:

Shrimp in Plum Sauce

Ingredients:

1 box SeaPak POPcorn shrimp

1 Jar Plum Sauce (this can be found in the Asian section of the grocery store or in Asian markets. We actually used a homemade sauce that I canned from our plum tree with a friend. It is amazing and worth the effort if you have access to plums!)

1 can pineapple chunks, drained

1 green bell pepper, chopped into bite size pieces

1/2 of a medium onion, chopped into bite size pieces

oil for drizzling in pan (I used canola and a hint of toasted sesame oil. Be careful with the sesame oil, it is strong and a little goes a long way)

Directions:

1. Cook shrimp as directed on packaging

2. While shrimp is cooking heat a wok or large saute pan and 1-2 TBS of oil over Medium High Heat. When oil is hot add onions and pepper and saute for about 2 minutes. Then add the drained pineapple chunks. Again saute for about 2 minutes. Then add about half of the plum sauce to start heating through.

3. When shrimp is done, add to wok and also add the remaining plum sauce. Toss until completely coated and plum sauce is heated through. Serve over white rice (or brown if you are feeling more health conscious).

This was a huge success in our house. Everyone LOVED it. If you can’t find plum sauce and don’t want to go through the effort to make and can your own you can easily swap out a sweet and sour sauce or an orange sauce. Get creative. The coating on the outside of this shrimp is perfect for absorbing this sweet/savory sauce.

Both the POPcorn Fish and POPcorn Shrimp will be making an appearance in upcoming meals in our home. My family loved both products and I love their convenience and good flavor.
