We do our best to reduce our environmental impact. In 2011 alone, our organic farming on 37,000 acres will:
* avoid use of over 333,000 pounds of toxic and persistent pesticides;
* avoid use of more than 11.2 million pounds of synthetic fertilizers;
* conserve an estimated 1.8 million gallons of petroleum by avoiding the use of petroleum-based pesticides and fertilizers; and
* fight global warming by absorbing as much carbon dioxide, a greenhouse gas, as taking more than 7,800 cars off the road.
On Earthbound Farms website you can meet the farmers, learn how to store your produce, test your knowledge on organic produce/farming and event visit the kid’s section with your little ones to learn about organic farming, create a compost bin and even download activity books!
I had the pleasure of reviewing both of Myra Goodman’s Earthbound Farms Cookbooks, Earthbound Cook – 250 Recipes for Delicious Food and A Healthy Planet and Food to Live By. The books not only teach you amazing recipes you can make with your family, but about Water Conservation, Saving Energy, Eating Local Seasonal Food and Eco Minded Living. We’re big shoppers at our local Farmers Market and it was delightful to go and pick out everything for the recipe we chose, “Irresistible Mini Calzones” which is found in Earthbound Cook and which I will be presenting on Recipe Wednesday. As the recipes for dough and bread products call for whole wheat flour, I was extremely excited to use the freshly ground flour I had picked up at a local harvesting event last year! The Calzones were so full of flavor, rich, delicious and as they’re titled irresistible… but let’s learn about the book from wince the recipe came.
Earthbound Cook is about cooking healthfully, mindfully and, above all, deliciously. It’s about living lightly on the planet and reveling in the pleasures of fresh, wholesome food.
The Earthbound Cook explores the many reasons to go organic, and the culinary magic and planet-friendly wisdom of a well-seasoned cast-iron pan — which travels beautifully from stovetop to oven when making Greek-Style Lamb Chops.
From Earthbound Farm’s Myra Godoman and her Farm Stand’s Organic Kitchen comes an appealing, casual style of cooking. Easy to prepare, the more than 260 recipes make a deliciously persuasive case for using flavorful, fresh, organic foods as often as possible.Take the Sweet Corn Chowder, which uses not only corn kernels for the soup, but also the stripped cobs to make a rich, herb-scented broth. Or Ginger Carrot Soup, which proves how even familiar vegetables take on a whole new intensity and character when raised organically.
Both of the cookbooks are incredible, not only the recipes, but the knowledge you gain by Myra Goodman’s insightful introductions. These are easily going to be my family’s stable cookbooks for a long time to come. I love cooking, I love baking and as Myra speaks of how beautiful it is cooking with her children, so it is and has been with my family…. however not as healthy as we are Mid-Westerners. This way my children can learn about making good choices in what they eat and to try new and exciting things that they may have never known they loved. These books are fantastic and I wholeheartedly support the mission of Earthbound Farms and their message for our families.
