I’ve been craving some Salt and Vinegar Game Day Chicken Wings lately. In fact, my whole family went to our favorite wing place recently, but I couldn’t get out of work in time to make dinner. Bummed, my husband asked why I couldn’t make my own. That man of mine. After searching, I found out that the one and only Ms Stewart has a lovely recipe for Malt Vinegar Salt which I’ve adapted a bit for this recipe. Salt and Vinegar Game Day Chicken Wings
First, you’re going to need to give yourself 24-48 hours to let this salt dry out. It’s the easiest mixture of malt vinegar, coarse salt, and corn starch. I ran out of time, finished the drying out in a warm oven, then used my food processor to pulverize the mixture into a nice powder. The original recipe says to just rack the salt, but I liked the powder.
Next, I washed, patted dry, then pan fried in butter and vinegar a dozen fresh wings. Once slightly browned, into the oven covered in the salt and vinegar powder. Take them out of the oven, hit once more with powder, and serve!
