In an effort to get kids eating healthier, Copps, Metro Market and Pick N Save launched the Produce for Kids? campaign to raise funds for Let’s Move Salad Bars to Schools. Launched on May 31, the Produce for Kids campaign will run through July 12 and offers shoppers healthy meal solutions, recipes and tips. Sponsors include Avocados from Mexico, BUDDY FRUITS, NatureSweet, organicgirl good clean greens and Shuman Produce. There are displays and signage in-store next to the product companies supporting the campaign. You’ll be supporting the campaijgn just by buying the partner products that you purchase every day!
At Produce for Kids, consumers can find more than 200 registered dietitian-approved and family-tested recipes to help their families eat healthier and also access meal planning tools, grocery store specific campaign details, and healthy tips from real parents. People are encouraged to share their own healthy recipes and tips during the campaign using the #produceforkids hashtag, and also check out their Facebook page on other ways to get involved.
I’ve found a serious love for avocado and could eat it on practically anything so when I saw this recipe on ProduceforKids.com for Salsa Avocado Toast, I knew that’s just what I had to recreate to share with you! It’s so tasty, easy to make and a great healthy lunchtime or snack?option.
Salsa Avocado Toast
- 1/2 yellow bell pepper, diced
- 1/2 small tomato, diced
- 1/4 small red onion, diced
- 1 lime, juiced
- 2 slices whole wheat bread
- 1 Mexican Hass avocado, mashed
- Mix pepper, tomato, onion and lime juice in small bowl. Season with salt and pepper, to taste.
- Toast bread. Top with mashed avocado and salsa.
