I’m always on a mission to find delicious, yet healthy recipes for my family. It’s usually an easy task because my kids have always loved their veggies!
Since I was on a mission to find a recipe that they’d love using one of the “Kid Inspired” recipes from Birds Eye, we all sat down at the computer together and checked out the selection. They had a lot of kid friendly recipes to choose from, but we finally narrowed it down to something we thought everyone would enjoy!
We chose to try the Taste Tester Corn Jalepeno Dip, which includes Steamfresh Corn and Broccoli from Birds Eye. It looked absolutely delicious on the website and Lil Man was excited that we could put Jalepenos in it!
We gathered our ingredients so that we could start making our concoction. Lil Man enjoys helping in the kitchen, but Big Bro just wasn’t in the mood once it was time to create our masterpiece. At least I had one helper though! He loves to mix things up, so that was the main part of his job while I cooked the veggies and chopped the Jalepenos.
We stirred, mixed and layered all of our ingredients as directed and ended up with this fabulous appetizer. We even went the extra step and served it in a Tortilla Bowl. He thought that was an awesome idea!
Our Taste Tester Corn Jalepeno Dip turned out amazing! Both of the kids loved it and so did my hubby and father in law. I thought it was quite delicious too!
Lil Man had such a great time helping me with this recipe. Ideally, he could do everything himself, aside from the chopping of Jalepenos. I’m sure this will become a well known recipe in our house and I can see him making this for our family get togethers!

INGREDIENTS
1 package (12 oz.) Steamfresh? Broccoli Florets, cooked according to package directions
1 package (12 oz.) Steamfresh? Chef’s Favorites Lightly Seasoned Southwestern Style Corn, cooked according to package directions
1 (8 oz.) container sour cream, divided
1-1/4 cup shredded Cheddar cheese, divided
1 tomato, diced {we used salsa instead}
1 cup prepared guacamole
1 jalapeno pepper (Optional), seeded and finely chopped
4 (6-inch) flour tortillas (Optional)
COOKING INSTRUCTIONS
1. In medium bowl, blend broccoli with 1/2 cup sour cream.
2. In 4 tortilla bowls or individual dip bowls, evenly layer cooked southwest corn, 1 cup cheese, tomatoes, broccoli mixture, guacamole, remaining sour cream and jalapeno.
3. Sprinkle with remaining cheese. Serve with your favorite dippers.
Tortilla Bowls (optional): Arrange 1 (6-inch) flour tortilla in a 2-cup microwave safe bowl, pressing down to make a bowl shape. Microwave on HIGH 60 seconds. Carefully remove from bowl and let stand on wire rack until cooled and hard. Repeat with 3 additional tortillas.
KITCHEN TIPS
Try substituting 1 cup of your favorite prepared salsa in place of the diced tomato.
