When it comes to side dishes, wild rice is one of my main go to’s. It’s tasty, filling and the whole family enjoys it. Well, last Christmas my aunt made this super delicious casserole with wild rice, mushrooms and broccoli so I though that I would try to recreate it for my family. I picked up my ingredients like Portabello mushrooms, broccoli crowns and wild rice.

I chose Uncle Ben’s Ready Rice Long Grain and Wild because it super simple to make in just 90 seconds and I knew Lil Man could help me whip this tasty dish together in no time. He loves to cook and I try to encourage that because it’s been shown that kids who cook and eat with their families tend to eat healthier foods, have healthier eating habits as adults, and have higher academic achievement.

Uncle Ben’s has teamed up with mom, actress, cook and lifestyle expert, Tiffani Thiessen for the sixth year of the BEN’S BEGINNERS? Cooking Contest, which is a big movement from the brand to help encourage kids to get in the kitchen, cooking with their families. In an effort to create healthier local communities, the UNCLE BEN’S BEN’S BEGINNERS? program has donated $715,000 to children and schools across the country while encouraging families to cook together.
Kids in grades K-8 can share photos of their families cooking rice based dishes together using #BensBeginners on social media for entry into the BEN’S BEGINNERS? Cooking Contest. The contest will run until 11:59p.m. ET on October 9, 2017 and one grand prize winner will receive $15,000 cash, a $30,000 cafeteria makeover for their child’s school and a hometown celebration!

Cooking is such a great way to spend time bonding as a a family and frankly, cooking is pretty much an essential life skill to have. I personally enjoy cooking with Lil Man and that boy sure has learned to cook up some tasty dishes! I just know this?Broccoli and Portobello Mushroom Wild Rice Casserole will be one of our new go-to sides because it is super simple to make.
We literally steamed some fresh broccoli for about 10 minutes and sauteed some Portabello mushrooms. Using Uncle Ben’s ready Rice made it that much easier because it only took 90 seconds in the microwave. About 15 minutes is all that it took to make this tasty?Broccoli and Portobello Mushroom Wild Rice Casserole side dish!

This?Broccoli and Portobello Mushroom Wild Rice Casserole is perfect to pair with a number of meals. We grilled some brat patties the day that we made it, but I’ll bet it would be tasty paired with steak, pork chops and even chicken. I for one, will be making this pretty frequently and it’s a great vegetarian dish to serve too!

- 1 package Uncle Ben’s Ready Rice Long Grain & Wild
- 1 cup broccoli, cut and steamed
- 1 cup Portabello mushrooms, sliced or quartered and sauteed
- Cut and Steam broccoli
- Cut and saute mushrooms
- Prepare rice according to package directions
- Mix all together and serve hot
- Recipe can be doubled or tripled to feed a larger crowd.
