I can’t believe the first day of school is already upon us. My son’s backpack is ready to go filled with his school supplies, and I’d be lying if I said I wasn’t ready for school to begin. When I was in school, my mom made it a tradition to make a big, tasty breakfast for my brother and I on the first day of school. Even though my son is small, I decided to continue to tradition and plan to make him something special for his first day:Chocolate Peanut Butter Banana Stuffed French Toast.

French toast is one of my favorite breakfast treats. I love it even more when it’s stuffed with goodness like sweetened cream cheese. It’s pretty simple to make, using ingredients I usually have on hand. This makes 4 servings of 2 stuffed triangles per person, but can easily be adjusted depending on how hungry you are or how many people you need to feed.
Ingredients:
- 8 slices of bread – I used whole wheat
- 2 bananas (sliced)
- 2 oz cream cheese
- 2 tbsp peanut butter
- 1/2 cup chocolate chips – I used dark chocolate chips
- 2 eggs
- 1 tsp vanilla extract (optional)
- 2 tsp sweetener of choice (sugar, honey, stevia, etc)
- Butter or cooking spray for pan
- Syrup if desired
To make:
- Warm cream cheese and peanut butter slightly in the microwave to allow for easy mixing. Combine peanut butter and cream cheese with sweetener of choice.
- Spread evenly onto each slice of bread.
- Layer 4 slices of bread with banana slices and chocolate chips. Place another slice of bread on top (that has the peanut butter cream cheese mixture only on it) like a sandwich.
- Heat the skillet on medium and add butter or spray with cooking spray.
- In a bowl, add eggs and vanilla extract (optional) and beat. Dip the French Toast “sandwich” into the egg and then put in the skillet.
- Cook both sides until brown.
- Cut in half to make 2 triangle. You can also top with additional banana slices, chocolate chips, or syrup if desired.

This is an amazing breakfast. It’s so delicious and filling; I didn’t even think about eating again until well after lunchtime. While it’s on the decadent side, it’s packed full of protein from the peanut butter and cream cheese and has fruit and whole grains. This is perfect for a breakfast treat to celebrate the first day of school.
