I’ve kinda been on a health kick lately and I’ve been trying new recipes that are Whole30 approved. I embarked on my Whole30 journey about a month ago and have never looked back. I felt so amazing and it really taught me that what I was putting in my mouth was causing a lot of my aches and pains. I also lost 10lbs as an added bonus!
One recipe I loved and I thought was super easy is this Tilapia Dinner for Four. My neighbor had me over for dinner one night when my husband was out of town, and thankfully my she supports me with my Whole30 journey.
I then made it for the family a few weeks later and really loved it!
Tilapia Dinner for Four
I bought a package of frozen Tilapia at our local grocery store and unthawed them and sprinkled them with salt and pepper.
I then took out my 9×13 pan and layered a whole bag of spinach on the bottom, opened a can of seasoned diced tomatoes, and cut up one onion. If you like olive juice like I do then you can add a few splashes of that as well, but you don’t have to.
Sprinkled some balsamic and olive oil, then laid my tilapia on top. I finished it off with some olives and capers. Totally optional.
That’s really it! I made mine with a side of roasted potatoes(since they’re whole30 approved)put you can serve it with rice as well.
Ingredients:
- 5-6 Pieces of Tilapia
- 1 bag of baby spinach
- 1 can of seasoned diced tomatoes
- 1 onion
- Balsamic and Olive Oil
- Olives plus a little juice
- capers(optional)
- Salt and Pepper
