With a family full of teenage boys and young men, mealtime can get a little tricky at times. One is super picky, another somewhat picky and the others will pretty much eat whatever is put in front of them for dinner. Me, now I like a variety and I get really tired of the same ole’ meals week after week. Even when it comes to my favorite recipes, there is such a thing as “too much of a good thing”.
My family has been asking about Beef Stroganoff for some time now and I’ll fully admit that I wasn’t exactly excited to ever make it because it’s not a meal that I was ever a fan of. But then I heard about these Campbell’s Soups for Easy Cooking and when I noticed that one of the varieties was Savory Portobello Mushroom, I thought I might as well give it a try. After all, mushrooms are a must have pairing when I eat steak, so I thought this might just make a perfect base for cooking Beef Stroganoff.

This Savory Portobello Mushroom Beef Stroganoff recipe was very easy to make and is perfect for busy weeknight dinners. With just a few simple ingredients, you can throw it in a crock pot like I did and arrive home to a delicious aroma of beef and mushroom. But it’s also simple and quick enough to whip up after getting home from a long day.
I’ll tell you what, for someone who wasn’t a fan of Beef Stroganoff before this, I was quite taken by the wonderful aroma coming from the crock pot every time I walked through my kitchen!
Ingredients:
- Campbell’s Soups for Easy Cooking – Savory Portobello Mushroom
- 2 cups beef broth
- 2.5 lb sirloin beef roast, cut into 1/2 inch x 2 inch pieces
- 8oz Portobella mushrooms, sliced
- 12 oz sour cream
- 4 tbs corn starch
- Combine the first 4 ingredients (Campbell’s Soups for Easy Cooking – Savory Portobello Mushroom, beef broth, beef and mushrooms) into a crock. Cook 6 hours on low.
- After 6 hours, remove liquid from crock and pour into a sauce pan. Add sour cream and corn starch, bring to a boil and sauce will thicken.
- Return sauce mixture to crock, stir well.
- Serve Savory Portobello Mushroom Beef Stroganoff over egg noodles and enjoy!
Alternate Directions:
If a crock pot isn’t your thing or you don’t have the time, don’t fret because you can still make this delicious meal! Just brown your meat and add everything from step 1 into a stove pot. Simmer for 15 minutes, then add sour cream and corn starch. Bring to a boil, stir and serve over egg noodles.
