Peppermint doesn’t have to just be a Christmas time treat, these Polar Mint Brownies are the perfect treat to bring to any late holiday parties or eve to a New Year’s Eve get together! And the best part, you can totally cheat, these are “semi-homemade” dessert!
Polar Mint Brownies
Take a large family size box of brownie mix and add half a bag of chocolate chunks and?a teaspoon of mint or peppermint.
Now, bake for 15 minutes then take out of oven and rest for fifteen minute. Trust me. While they’re resting, put about ten mini candy canes or about three regular size ones, and SMASH!
The rest gives these brownies a gooey, chewy center, especially with the added chocolate chips!
Now pop them back in the oven to finish cooking, just subtract to find the remaining time from the suggested bake time. Once finished, allow to cool on a wire rack until no longer warm to the touch.
In a microwave or double broiler, melt milk chocolate chips until smooth and shiny. Simply pour over the brownies, then top with the crushed candy cane pieces. Or, cut the brownies into pieces, then top with melted chocolate and strategically place your candies, so each piece is centered with candy canes! And you’re?done!

Ingredients
- 1 Family Size Brownie Mix (with chocolate chips if available)
- 1 teaspoon Peppermint Extract
- 1 bag of milk chocolate chips
- 1 cup crushed candy cane pieces
Directions
- Mix brownies as directed with added additions of extract and chocolate chips
- Bake for 15 minutes
- Remove from oven and allow to rest 15-20 minutes
- Finish baking
- Allow to cool then top with bag of melted chocolate chips and crushed candy canes
