Summer is here and for my
family that means lots of delicious recipes that involve seasonal fruit.
Wyman’s of Maine frozen fruit is the perfect ingredient for our recipes
because the fruit we want might not be in season, or sometimes I like
to buy ahead of time or many times the fruit I am looking for just doesn’t look
good at the grocery store but my frozen berries are always ready to go.
Wyman’s of Maine harvests and quick-freezes their fruit
to bring you farm to freezer to table wild blueberries, strawberries,
blackberries, raspberries and mango chunks.
That is a picture of them right out of the package. Thankfully all the berries are loose and not stuck together with giant hunks of ice.
How Wyman’s keeps their fruit so fresh
The best way to consume fruit is at the peak of its freshness. Consuming fruit that has been IQF (Individually Quick Frozen) or flash frozen is the next best thing to fresh off the bush, vine, etc. To lock in the freshness and taste, Wyman’s of Maine froze their fruit within 24 hours of harvest to prevent the slow growth of ice crystals inside, which expand and destroy the cell structure, and leads to mushy fruit. Wyman’s fruit, however, will taste as fresh as the day it was picked (sans mush). The FDA has concluded that frozen produce is just as healthy as fresh and may even retain their nutritional value longer. - 2 Bags of Wyman’s of Maine Frozen Berries
- 1 (10-inch) graham cracker crust
- 1/2 cup Truvia Baking Blend
- 3 tablespoons all-purpose flour
- 1 1/2 teaspoons of vanilla extract
- Grated Rind of 1 lemon
- 1 (8-ounce) container sour cream
- 1/2 cup dry breadcrumbs
- 1 tablespoon Truvia Baking Blend
- 1/2 stick of butter, melted
- Preheat oven to 375 degrees
- Place berries in crust, set aside
- Combine Truvia baking blend, flour, vanilla, lemon rind, and sour cream, spread over berries
- In a seperate bowl, combine breadcrumbs, Truvia baking blend, butter, sprinkle over sour cream mixture
- Bake at 375 for 40 minutes or until set and crumbs are lightly browned
- Let it sit out and cool for at least an hour
