There are a lot of days where I want a nice meal, but I don’t really feel like cooking or I just don’t have time for it. These are the days I love using my Slow Cooker or Roaster! This recipe uses a Roaster, but I’m sure it can also be done in the oven. It is also using a smaller organic bird rather than the larger ones, so if you find the butter mixture isn’t enough just double it for your bird.
What You Need for the Chicken:
- 1/2 tsp Dried Rosemary
- 1/2 tsp Ground Sage
- 1/2 tsp Black Pepper
- 1/2 tbsp Salt
- 4 tbsp Melted Butter
- 1 Whole Chicken
- 5 large Red Potatoes
- 3 tbsp of butter
- Salt & Pepper
Peel and slice the red potatoes and boil them for 15-20min or until tender (not squishy). Remove and drain.
Add the potatoes and the butter to a skillet on Med-High heat and cook until the potatoes brown. It’s best to use a spatula and flip the potatoes so they don’t fry.
Salt and Pepper to taste!
