Mornings are difficult. How can the morning of a stay at home mom with only one child be difficult you ask? Simple, I am a night owl, often only into bed a few hours prior to my son waking up. There are morning where I just roll out of bed and the last thing I want to be is super mom and whip up a batch of homemade muffins. Cereal is my go to choice on those days, with so many varieties, it’s not difficult to choose one that’s healthy and tastes great! But that’s not always the case for some parents out there. Gluten sensitivity is on the rise and comes it all different forms. For parents with children with this condition (or they themselves), finding a delicious and safe product to whip together is not always easy. But thanks to Chex, breakfast just got a little easier for those families!
Vanilla Chex is the newest gluten free flavor available from Chex and it is by far my favorite. Like other flavors, Vanilla Chex is free of artificial flavors and colors. One serving offers 120 calories, roughly 9 grams of whole grain, and two grams of fat, and for all it’s sweetness, only 8 grams of sugar.
As delicious as the cereal is, it’s a tad too sweet for so early in the morning for me and even for Sonshine. We both only make it through half a bowl before our sweet tooth can’t take it anymore. My husband, the supposed anti-sweet tooth, loves it and could eat bowl after bowl. It’s the perfect weekend cereal or special occasion. Where Vanilla Chex really shines is in the baking/treat department. Replace it in your standard Muddy Buddy Mix for an extra touch of sweetness. Crunch it up fine and mix with cinnamon for a new take on cinnamon-sugar for toast or sprinkled on popcorn. We made a Gluten-Free Peanut Butter Vanilla Honey Party Mix and although ugly (I couldn’t post the picture I had and sully my good name) it’s delicious!
Gluten-Free Peanut Butter Vanilla Honey Party Mix Recipe
- 1/4 Cup Butter or Margarine
- 3 TBL Honey
- 1/2 Cup Peanut Butter (or replacement)
- 8 Cups Gluten-Free Vanilla Chex
- 1 Cup Gluten-Free Oats
- 1 TBL Cinnamon
- 1 Cup Powdered Sugar
- Melt butter in microwave safe bowl or on stove top, stir in honey and peanut butter.
- In a large bowl, toss cereal, oats, and cinnamon together.
- Carefully pour butter mixture over cereal and toss to evenly coat.
- Place mixture into a plastic bag and add powdered sugar, shake to coat.
- Spread onto a flat surface to cool, store in an air tight container
My son has been munching on this mix for days now. Although it’s sweet, the peanut butter adds extra protein and the oats are full of all sorts of health benefits! See, gluten free diets don’t have to be boring! We’re really enjoying our Vanilla Chex for a quick breakfast and snacks, it’s a healthy meal I can give to my kid with little to no brain function in the morning!
