I love greens, and this cooking method is easy and tasty; even my husband likes them! Use fresh greens from your garden to make these Southern Style Collard Greens!
Southern style collard greens
Start with a bunch of greens. Rinse and dry them.
Remove the large vein and tear into small pieces.
Place them in the crock pot.
This recipe is really versatile, and you can play around with what you like best. I use fresh minced garlic or garlic powder, red pepper flakes, salt & pepper. You can add onions if you like them!
I like to add 2-3 pieces of cooked, crumbled bacon (adjust the amount for a larger or smaller batch!)
Add just enough water to just about cover the greens, then cook on high approximately 4 hours, or until they are as tender as you like.
I like mine soft but not mushy.
How do you get the bitterness out of collard greens?
Salt will help to reduce the bitterness of coallard greens. Bacon will help ease the bitterness too, as will pancetta or proscuitto.
What to add to greens to make it taste better?
If you’re not a fan of garlic and bcon, you could try adding grated ginger, honey, different oils, vinegars, and/or soy sauce. You could add chopped green onion near the end of cooking too.
Can you cook collard greens too long?
While overcooking collard greens is nearly impossible, I peronally do not like them mushy.

- 1/2 tspe salt
