I’m coming to terms with the fact that I probably will never go out and celebrate St. Patty’s Day with a green beer at the bar again. It’s okay, really. I have food dye and beer at home. It’s been more fun thinking of family friendly and tasty recipes with my little leprechaun; like these Irish Dirt Cakes.
Irish Dirt Cakes
Here’s what you’ll need to make them:
- Cool Mint Oreo Cookies
- Vanilla pudding
- Cream cheese
- Whipping cream
- Vanilla Extract
- Peppermint extract
- Green and blue food coloring
To start, fill a plastic baggie with two rows of Mint Oreo Cookies, minus one for you and however many kids are helping out.
Now take out all your frustration on the sealed up bag! Smash, smash, smash!!! Or, let the kids do this part. The size of the chunks depends on you. We had a great mixture of large pieces and powdery crumbs.
Make your pudding, but omit half a cup of the milk called for. This makes it extra thick and creamy. While whisking, add six drops of green dye with three drops of blue. This will give you a nice mint green St Patty’s Day color. While the pudding is thickening up, make the to die for whipped cream.
Whip cream cheese, sugar, vanilla extract, and peppermint extract together. Whip it good! Once it’s blended together, slowly add heavy whipping cream until sturdy peaks form. Resist the urge to eat straight from the bowl. (Side note: This whipped cream icing is sturdy and will not melt if left out, so it’s great for cakes and cupcakes too!)
Now it’s time to assemble! Layer your pudding, cookies, and whipped cream two to three times. Top with a generous heaping of whipped topping. I used my icing gun, but feel free to dollop on top with a spoon! You should get between 6-8 individual cakes or two round cakes. Sprinkle any remaining cookie crumbs on top. Listen to your child beg to eat these Irish Dirt Cakes now instead of after dinner.
