I found this Kissing Santa Claus Christmas Cookie recipe in a magazine 10 or more years ago. It is by far the best tasting of all similar recipes to this one that I have tried.
Kissing Santa Claus Recipe
Makes 48 cookies
Ingredients:
- Nonstick vegetable spray
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1 stick salted butter
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 1 tsp vanilla
- 1/2 cup peanut butter
- 1 egg
- 48 Hershey’s Chocolate Kisses {unwrapped}
- Red or green colored sugar
Directions:
Preheat oven to 375 degrees. Coat a cookie sheet with nonstick vegetable spray. In a small mixing bowl, sift together the flour and baking soda, then set aside. Using an electric mixer, cream the butter, light brown sugar, granulated sugar, vanilla and peanut butter in a mixing bowl for about 2 minutes, until light and fluffy. Add the egg to the peanut butter mixture, mix for about 10 seconds. Add the flour mixture to the peanut butter mixture, blend on low speed for about 20 seconds or until dough is smooth.
Take teaspoon size pieces of dough and roll them into balls using your hands. Dip one side of each ball into colored sugar, place balls sugar side up on prepared cookie sheet. Bake for about 8-10 minuted. Remove from oven and immediately place one Hershey’s Kiss into the center of each cookie. Move to wire rack to cool.
