We’re pretty big fans of Mexican food around here. Tacos are a staple and we have them at least once a month, sometimes twice. The same goes for burritos.
Last month, I received a couple of packages of MexAmerica tortillas to test out. Their flour tortillas come in a variety of sizes and are Kosher, which I was surprised to learn. A friend of mine will be happy to hear this news! They also come in White, Whole Wheat Blend or 100% Honey Whole Wheat.
I wanted to mix things up a bit when I tried these tortillas, so I didn’t want to make burritos as I usually would. Instead, I decided Chicken Enchiladas sounded delicious! I’ve made them a number of times before, but I wanted to mix things up a bit this time and include some Spanish Rice inside of them.
After prepping and baking, the Chicken Enchiladas were finally done. The first bite was amazing, honestly the best Chicken Enchiladas that I’ve had yet! I don’t know if it was the tortillas, Spanish Rice or something else that I did, but these Chicken Enchiladas were to die for, seriously! Maybe it was a little mix of everything, who knows. But just in case, I’m using MexAmerica tortillas and Spanish Rice in mine from now on! Oh, and be sure to check back because I’ll be sharing this recipe soon!
