We cook on the grill quite often in the summertime, so I was really excited when I was one of the lucky bloggers to be selected to host a “Beef. It’s What’s for Dinner” party. I couldn’t wait to check out the healthy beef cookbook and find a delicious recipe to share with my family and guests.
My party kit arrived with a gift card to purchase supplies for my recipe, a cookbook, tongs, meat thermometer, apron, shirt and a couple of pamphlets. Of course I started looking at the recipes right away so that I could create a delicious recipe that would wow my guests. Indeed, I did wow them and I’ll tell you all about it below. I’ll also share two recipes that you have got to try!
Since we live on a lake, our parties are usually never complete without the water. Our good friend brought his three daughters and two of their friends for a day of fun on the lake. We took out his boat and the jet ski, did some tubing and just had a great time. I even rode the “Hot Dog” for the first time! By the time we were done, everyone was famished. So I went into the house and started preparing the kabobs and the rest of the food.
Our menu consisted of Dijon-Wine Steak Kabobs, steaks using the same marinade, Mushroom Wild Rice, Brats and a Garden Salad.
I deviated away from the recipe just a tad and substituted mushrooms for the squash as I forgot to grab a summer squash from the store. Of course I had to triple the recipe as well! The Man grilled the steaks and kabobs to perfection!
Here’s my plate. Doesn’t everything look delicious? well let me tell you, it was! Everybody raved over the meat, saying the marinade was amazing, the best they’d tried! I have to agree, even though I make a pretty good marinade from scratch myself. I will definitely be using this one quite often and it may just replace my old marinade recipe more often that not!
The Mushroom Wild Rice was very good too! The only difference to regular wild rice is the mushrooms, but boy do they make a difference! I will be adding mushrooms to my wild rice from now on, it was that good!
All in all, our little party on the lake turned out to be so much fun and the food afterward just put the icing on the cake! Even the kids were raving about the food, so you know it was great!

Total preparation and cooking time: 30 minutes
Marinating time: 6 hours or overnight
Makes 4 servings
- 1 pound boneless beef round tip steak, cut 1 inch thick
- 1/2 small red onion, cut into 3/4-inch wedges
- 1 small yellow summer squash, cut lengthwise in half then crosswise into 1-inch slices {I used Portabella Mushrooms instead}
- 1 small red or green bell pepper, cut into 1-inch pieces
- Mushroom Wild Rice {recipe follows}
- 2 tablespoons water
- 2 tablespoons red wine vinegar
- 2 tablespoons coarse-grain Dijon-style mustard
- 2 cloves garlic, minced
- 2 teaspoons vegetable oil
- 1/2 teaspoon coarse-grind black pepper
- 2 teaspoons vegetable oil
- 2 cups thinly sliced assorted wild mushrooms (oyster, cremini and shitake)
- 1 package (6 ounces) long-grain and wild rice blend
