Ice Cream Sandwiches are a classic, well loved dessert by all. But you know sometimes people just get sick of the same ole’ thing; they want to change things up a bit and tantalize their taste buds. That’s why I wanted to share this super quick and easy way to make your own Homemade Ice Cream Cookie Sandwiches that will just wow the socks off of anyone who tries them!
First, you start with some cookies. You can make them yourself or purchase them from your local bakery or even the grocery store bakery. Just make sure they’re large cookies and they’re soft enough, because they’ll turn out much better! You can do any flavor you desire. I used Chocolate Chip and M&M cookies, but you could use sugar, peanut butter or any other cookies.
Once your cookies are ready, turn two upside down on paper towel. This will get messy, so you’ll go through a few paper towels.
Grab a big spoon and scoop a big spoon full onto one of the cookies. Top it off with the other cookie.
It should look like this. YUM! But don’t eat it yet!
Grab some saran wrap, wrap the ice cream cookie sandwich, then even out the ice cream around all sides. You can do this before wrapping, but I’ve found it to be much easier to do after the fact.
Freeze for a couple of hours or days, eat and enjoy!
