Sonshine’s been hanging off my leg all day long, begging me for cookies. I looked in my cupboards and found, I’m without flour and the fridge was lacking in butter as well. What’s a supermom to do?
Make six ingredient peanut butter cookies, of course!
Ingredients
- Pinch of salt
- One egg
- 1 tsp baking soda
- 1/2 cup brown sugar
- 3/4 cup granulated sugar
- 1 1/2 cup peanut butter
- plus a 1/2 cup to 1 cup of sugar to roll pb balls in
Directions
- Pre-heat oven to 350. Line a baking sheet with tin foil
- Mix all ingredients in a medium size mixing bowl. I added them two at a time and just used a whisk.
- Now, grab a small hunk and roll into a ball
- Once you have a ball, roll it in the sugar and evenly separate them on baking sheet
- With a fork, make a criss-cross pattern to flatten each cookie
- Bake for 6 minutes. If not quite done, bake one additional minute. No more than 10.
