It’s been a looong time since I posted just a recipe around here! I’ve been in the mood for summer and summer foods lately so I thought a lemon bread brimming with fresh blueberries would be a delicious way to pretend warmer months have come! It’s time for some Good Grub!
Ingredients
- 1 stick unsalted butter; room temperature
- 1 1/2 cups granulated sugar
- 1 1/2 cups all purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1 lemon
- 3 tsp lemon zest
- 1/4-1/2 cups milk; will vary on your mixture
- 1 carton fresh blueberries OR 1 1/2 cups frozen blueberries thawed, drained & dried
- 1/2 lemon
- 2 tbl spoons powdered sugar
Directions
- Preheat oven to 325 degrees
- Grease a loaf pan, whatever size you have will do
- Using a mixer, cream your butter and granulated sugar until light and fluffy in large bowl
- Sift together flour, baking soda and salt in a small bowl
- Add one egg at a time to wet mixture taking care to beat well after each addition
- Cut one lemon in half and squeeze juice into wet mixture (I just cup my hand to catch the seeds)
- Add lemon zest (grate the skin of the lemon, avoid the white part!)
- Mix lightly to incorporate the lemon juice and zest
- Alternatively, add dry ingredients and the milk to the wet ingredients
- Only add enough milk to keep the mixture wet. You want the consistency to be slightly elastic, not as runny as a cake
- Fold in blueberries
- Pour into loaf pan and bake for 50-60 minutes. Loaf is done when a tooth pick inserted comes out clean and edges are golden brown
- While loaf is cooling, cut other lemon and squeeze juice into a small bowl with powdered sugar. Beat on low until you have a glaze. Pour over loaf while still warm
