Tis the time of year when even people that normally don’t bake, find something to bake. Whether it be cookies, pies or a decadent cake, there’s usually delicious smells coming out of the oven in homes everywhere.
I don’t know about you, but I love to include nuts when I bake. They just seem to give that delicious desert that little extra oomph of flavor that we all crave. Many of my holiday cookie recipes call for nuts, and I include them even in some that don’t. A few days after I received some Fisher Nuts to review, I made Magic Cookie Bars. I tossed some of the walnuts into a ziplock baggy and handed my sister the meat tenderizer to get out some of that aggression. It was like baking fun and therapy all in one while she was crushing the nuts!
My Magic Cookie Bars were devoured before I could take a photo for you all, but I assure you that I will share that recipe soon because I need to make more for my holiday cookie tins. I will tell you thought that the Walnuts from Fisher were delicious by themselves as well as in the recipe. These are wonderful nuts for baking!
Fisher recently introduce a stand up bag that features a flat, expandable bottom and wide top to make it easier to scoop your nuts out and into the mixing bowl. It also has a freshness seal, so you can store them right in the bag they came in!
Ingredients:
2 cups all-purpose flour
1? teaspoons baking powder
? teaspoon ground cinnamon
? cup (1 stick) unsalted butter, softened
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
3 ripe bananas, peeled and sliced
1 cup Fisher? Chef’s Naturals Chopped Walnuts
Directions:
Preheat oven to 350?F. Lightly spray 9 x 5-inch loaf pan with no-stick cooking spray; set aside.
In medium bowl combine flour, baking powder and cinnamon; set aside.
In large bowl cream butter and sugar using electric mixer. Add eggs and vanilla extract; mix until blended. Add bananas. Gradually add flour mixture to butter mixture; mix well. Stir in chopped walnuts until combined.
Spread mixture into prepared pan. Bake 55 to 60 minutes or until toothpick inserted in center is clean when removed. Remove to cooling rack; cool 10 minutes. Gently loosen edges of bread from pan; remove and cool completely. Cut into slices to serve.
