I decided to whip up a nice Chicken dish when I received an abundance of chicken from Zaycon Foods. I’ll be writing a review for their wonderful company and this tasty chicken later this month. For now, however, I will just show you one of the recipes I put together quickly after receiving the chicken (it comes fresh, not frozen!) because I was hungry.
Lemon Chicken over Pepper Rice
What You Need
- 2 Chicken Breasts
- 1/4 cup of Onion
- 2 Green Peppers
- 1 can of un-marinated Artichoke Hearts (or rinsed)
- Lemon Juice
- 4 cups of Rice
- Salt
- Pepper
- Olive Oil
Slice the chicken up into strips. I do this for two reasons: 1) It’s easier to brown and 2) I can put the extra grilled chicken away for salads. This image is based off 4 chicken breasts because I was making extra.
Once you’ve sliced all the chicken into strips take the lemon juice and spritz the chicken thoroughly on both sides. You could also place it into a ziplock bag and do this, shaking it up to coat the chicken well. After this is done, pepper the chicken. This is open to how much you like pepper.
Add 3 tbsp of Olive Oil (or 2 if you have a smaller skillet) to a large skillet and grill the chicken strips on med-high.
While turning the chicken over intermediately so it browns well, you can prep your 2 green peppers and 1/4 of an onion by slicing them length wise.
Add a tbsp of Olive Oil to a smaller skillet with a teaspoon of lemon juice on high and add in your vegetables. Stir these frequently until the peppers are tender.
Follow the directions on a box of Minute Rice, I used Brown Rice but that is because I prefer it for healthy reasons. You can use White Minute Rice and it will be just fine.
Your chicken should be cooked to 170′ or should pull away easily. To get the browning on the chicken (if while cooking it there was too much juice) pour everything out of the pan once the chicken is cooked and sear on high for a few seconds.
Add a little salt and pepper to your vegetables and mix with the rice.
Place a spoonful of the Pepper rice on a plate, layer it with strips of Lemon Pepper chicken and serve!
My 2 1/2 year old doesn’t like the rice, but loves Lemon Pepper chicken. So I cut up small pieces of the chicken and served his with different sides. Otherwise it is a wonderful family dinner recipe or one you can dress up and serve for friends!
