I met a neighbor for the first time last year on her birthday, her husband was in Iraq and her kids were young so she spent her birthday watching old movies by herself. I went home and pulled out this soft peanut butter cookie recipe from an old book I put together years ago and made her a plate of cookies. Sometimes it’s the simple recipes that give the most love and mean the most to people who need something a little sweet in their day. Cookies are inexpensive and thoughtful to bake and quite frankly the best scent you could ever use to perfume your home.
Soft Peanut Butter Cookie Recipe
What You Need
1/2 Cup Regular Sugar
1/2 Cup Brown Sugar
1/2 Cup Peanut Butter
1/4 Cup Shortening
1/4 Cup of Butter or Margerine
1 Egg
1 1/4 Cup of Flour
3/4 Tsp of Baking Soda
1/2 Tsp of Baking Powder
1/4 Tsp Salt
1/2 Tsp of Vanilla
Mix Sugars, Peanut Butter, Shortening, Butter, Vanilla and Egg in a large bowl and mix well. Stir in the remaining ingredients. Refrigerate for 1-2 hours or until the dough is firm.
Heat Oven to 375′.
Shape dough into little balls and place 3 in apart on an ungreased cookie sheet. Flatten the cookies in a crisscross pattern with a fork. You can dip your fork in sugar for a nice touch. Bake for 8-9 min. Let them cool a moment before removing them from the cookie sheet or they will fall apart.
This recipe is supposed to make 2 dozen but it really depends on how big you want your cookies. You never know, maybe you just want to make one very large peanut butter cookie just for fun!
