My Mother always pulls the whole family together for Easter, makes all the baskets for the grand-children and tops the entire day off with an Easter Meal. It’s a lot of work for one woman and if you have a sibling like my brother Andy well… we’re lucky if dinner arrives on the table before he’s finished snacking on it. So here are 3 Easy Easter Appetizers to sate your dinner-picking thief brothers or your sugar rushed children that keep asking you when dinner will be ready. They can be made ready to serve the day before so you can enjoy your Easter morning without worry, as long as your husband doesn’t raid the fridge.
3 Easy Easter Appetizer Recipes – Manda’s Meals
Eggs Stuff with Smoked Salmon
(a different take on deviled eggs)
10 Large Hard Boiled Eggs
2 oz. (1/3c) Smoked Salmon finely chopped
3 Tbsp of Mayonnaise
2 tsp of Fresh Dill
Pepper
Slice Eggs lengthwise in half and remove yolks, placing them in a bowl. With a fork break the yolks into chucks. Add all but a tbsp of Salmon, Mayonnaise, Dill and 1/8 tsp of Pepper. Mix. Do not blend into a cream, just Mix.
Place the sliced Egg white on a dish and spoon in the Salmon/Yolk mix and refrigerate!
Smoked Salmon Crackers
(compliments of my sister Sarah)
1 pkg of Smoked Salmon
1 box of Ritz Crackers
1 pkg of Philly Cream Cheese
Spread Philly Cream Cheese on top of Ritz Crackers and top off with bite size pieces of Smoked Salmon. It seems very simple but is extremely good!
Cream Cheese Fruit Dip
(the most easy, delicious, addictive fruit dip)
1 pkg of softened Philly Cream Cheese
1 jar of Marshmallow Whip
Mix these two things together and serve on a beautiful dish of seasonal fruit. Try your best not to eat it all. I can’t promise it will make it to the table.
