One medium zucchini grated equals about 2/3 of a cup. 3 medium zucchinis should do for two cups grated. Since this recipe calls for 3 cups of shredded zucchini(which is the same as grated), I would use about 4 to 4 1/2 medium zucchinis.

- 3 cups of Shredded Zucchini
- 1 2/3 cups of Sugar
- 2/3 cup of Vegetable Oil
- 2 tsp of Vanilla
- 4 Large Eggs
- 3 cups of Whole Wheat Flour
- 2 tsp of Baking Soda
- 1 tsp of Salt
- 1 tsp Ground Cinnamon
- 1/2 tsp of Ground Cloves
- 1/2 tsp of Baking Powder
- 1/2 cup Coarsely Chopped Walnuts
- 1/2 cup Raisins
Directions:
- Preheat your oven to 350′. Generously grease a bread pan before starting, lightly coat flour over the oil. If using a spray, you must still coat with flour.
- Blend the Flour, Baking Soda, Salt, Cinnamon, Cloves and Baking Powder in one bowl.
- Blend the Zucchini, Vegetable Oil, Vanilla, Eggs, Nuts and Raisins in another bowl.
