The Man is a total meatball freak. He loves them. So when I was contacted to review Casa Di Bertacchi meatballs, I couldn’t pass it up.
When the Green Bay Packers made it to the Super Bowl, I knew we’d have to celebrate and we’d end up throwing a little shindig together. These meatballs would make perfect game day food!
I decided to try two different recipes from this amazing book “101 Things To Do With Meatballs” that I got in a nice little swag bag when I visited Bentonville, AR last September. Stephanie Ashcraft has some amazing recipes in that little book!
One of the recipes I chose was for Crescent-Wrapped Meatballs and those things were so easy to make. I paired them with a jar of marinara sauce and they were oh so yum.
Another recipe I tried was for Meatball Jalepeno Poppers. I just had to try that because two of my guys just love spicy food. Actually, the spicier the better in their eyes! I’ll share that one {along with a photo} for you below!
Meatball Jalepeno Poppers
Ingredients:
- 13 jalapenos, stemmed
- 1 package {8 ounces} cream cheese, softened
- 13 frozen, fully cooked meatballs, thawed
- 13 slices {1 pound} sliced bacon, cut in half
Directions:
Preheat oven to 375 degrees
Slice each pepper in half lengthwise, remove the seeds, and rinse out. {I actually cut mine in half widthwise too because the ones at my store were pretty long.} Spread cream cheese in each jalepeno half. Cut the meatballs in half. Place each meatball half, cut side down, over cream cheese. Wrap a half slice of bacon around each stuffed jalepeno and secure with a toothpick. Place on a baking sheet and bake 25-30 minutes, or until bacon is browned. Serve immediately on a platter. Makes 26 appetizers.
Stephanie suggests using plastic gloves when cutting and preparing peppers to prevent skin irritation.
My family and our Super Bowl guests loved both of the meatball appetizers I made.They were both completely different from each other, so it gave us a nice variety. The Meatball Jalepeno Poppers did go over the best though because there weren’t any of those left. The recipe did make a smaller amount of those though. Either way, the meatballs were a hit!
