I get tired of the same old thing all the time, so I started mixing it up when it came time to make tacos. My kids love them, but honestly I can only eat tacos so often. I would always break the shells up and just pile everything in a bowl. So instead of your traditional tacos, I started making them into a casserole. Honestly, this taco bake?even tastes better than regular tacos to me.
This taco bake is super easy to make and you can double or triple it if you’re feeding a crowd. It’s a dish that everyone will enjoy and you can put out different toppings so that everyone can add the ingredients that they like.
Taco Bake Casserole
- 1 lb ground beef
- 1 package taco seasoning mix
- salsa
- 12 taco shells
- 1 – 14oz can re-fried beans
- 2 cups cheddar cheese, shredded
- lettuce
- Optional:
- diced tomatoes, diced avocados, sour cream, black olives
- Brown ground beef, drain and add taco seasoning
- In large baking dish, coat bottom with salsa
- Crush 4 taco shells and line them on the bottom of pan
- add 1/3 of meat and 1/3 of re-fried means, evenly
- Repeat steps 3 and 4 two more times for a total of 3 layers of shells, meat and beans
- Top with cheese
- Bake for 15 minutes
- Serve over a bed of lettuce and top to your liking
