Mediterranean Quinoa Salad with Feta and Olives
  • 3 Cups Cooked Quinoa – cooled
  • 1 Pint Grape Tomatoes
  • 1 Large Cucumber
  • 1 Can Black Olives
  • ΒΌ Cup Chopped Red Onion
  • 2 Tbsp Balasmic Vinegar
  • 2 tsp Chopped Garlic
  • 2 Tbsp Olive Oil
  • 4oz. Container Feta Cheese
  1. Chop your tomatoes, cucumber, and black olives into bite size pieces
  2. In a large bowl combine your veggies, feta and quinoa.
  3. In a small bowl combine your olive oil, garlic and balsamic vinegar and stir until well combined.
  4. Pour your dressing over your veggies and quinoa and stir until everything is well coated.
