With a household as large as mine, homemade dinners are almost essential every night of the week. There might be an occasional pizza night or an evening where we grab some tacos, but we rarely go to actual restaurants as a family. That means I’m always looking for new dinner ideas that will please everyone, since I have one especially picky eater. I’m a busy wok at home mom, so quick dinner recipes are essential a lot of days.
Forgetting that yesterday was Trick or Treating in our area, I needed a quick dinner idea. I had originally planned to make some yummy pork chops, but there just wasn’t time. So I went to the Land O’ Lakes website and found a fast and easy solution for mealtime, Teriyaki Chicken Wraps. Don’t worry, I’ve shared the recipe with you below too!
The recipe called for Land O?Lakes Saut? Express? Saut? Starter, which I hadn’t used before. The recipe looked amazing though, so I was excited to try this new mealtime helper found at Walmart {my favorite store!}.
I gathered and measured all of my ingredients such as shredded cabbage and carrots, diced green onions and cashews. After having these small glass bowls since last Christmas, I finally realized they were 8 oz, a full cup. Total dumb moment for me, but wow, my life in the kitchen is going to be easy now! And they have lids, another bonus!
I took 2 squares out of the package and popped them into a pan to melt. Then I remembered I had to double this recipe. I swear, I forget about that often! So I grabbed two more squares and cut up some more ingredients.
Once I had cooked the chicken, I was able to add the green onions, cabbage and cashews. I just love how colorful it looks!
2 minutes later, the mixture was ready to to put on a tortilla.
Then topped with raw carrots and cabbage – yum!
I have to say, these Teriyaki Chicken Wraps turned out Uh-mazing! Believe it or not, even the pickiest eater {my little brother} ate these and said they weren’t bad. He just didn’t like the cashews. I couldn’t believe he didn’t mind the veggies. Maybe he didn’t know they were in there?
After dinner last night, I scoured their site for more recipes and even thought of few of my own that would be great with the new Land O?Lakes Saut? Express? Saut? Starters. I can’t wait to cook up some more deliciousness!
You can follow Land O’ Lakes through their social channels for great mealtime inspiration, holiday ideas and so much more. They currently have some super adorable Halloween ideas on the Land O’ Lakes Facebook page. You’ll find @LandOLakesKtchn on Twitter and Instagram as well.
I’ve shared the original recipe below. I have a big family, so I had to double ours. I doubled every ingredient and it worked out perfect!
Ingredients
- 1 cup shredded purple cabbage*
- 1/2 cup shredded carrots*
- 2 Land O Lakes? Teriyaki Saut? Express? squares
- 1 pound boneless skinless chicken breasts, cut into strips
- 1/2 cup cashews
- 3 (1/4 cup) green onions, diagonally cut into 1-inch pieces
- 4 (8-inch) flour tortillas, warmed
Directions:
Combine cabbage and carrots in bowl; set aside.
Melt Saut? Express? squares in 12-inch nonstick skillet over medium-low heat just until bubbles begin to form.
Add chicken. Cook, stirring occasionally, 5-7 minutes or until chicken is no longer pink in center. Add cashews and green onions; stir. Continue cooking 1-2 minutes or until heated through.
Place 1/4 chicken mixture onto each tortilla; top with 1/4 cabbage mixture. Fold 2 opposite sides of tortilla over filling. Starting at open end, roll up tightly to enclose filling.
*Substitute 1 1/2 cups packaged Asian slaw for cabbage and carrots.
