This recipe is a twist to your typical Lemon Pepper Chicken and is very simple to make! Although I used the inexpensive chicken breasts with the bone/skin attached, you can still use boneless/skinless chicken breasts. Also, if you do not have leek, you can substitute green onion which is in the same family.
Ingredients:
2 Lg Chicken Breasts
3 tbsp of Lemon Juice
2 tbsp of Butter or Olive Oil
1 Chopped Leek
Salt & Pepper
Using 1 tbsp of the Lemon Juice, coat the chicken breasts and rub in a light layer of salt and pepper. If the skin is still attached to the chicken, make sure you coat underneath it.
Melt 2 tbsp of Butter (or Olive Oil) and the other 2tbsp of Lemon Juice in a skillet and place the Chicken in. Add your chopped Leek on top.
Cover and cook on Med., turning every 15-20 minutes until the temperature of the chicken breasts is 170′. It roughly takes 45min to 1hr to cook. Once the temperature is right, you should have a very tender and delicious dinner!
