I love to bake. I especially get into around this time of year, for the holidays. There’s nothing sweeter than a delicious homemade treat, fresh from the oven. Well maybe a tin or plate full of an assortment of goodies for someone special made with that special touch, love.
I’m pretty well known for baking in our family. Every year I share a platter of assorted cookies at our holiday gatherings. Each family then receives a tin or decorated platter full of my yummy treats and they just love it. Some even dig into theirs before they get home! Since I love finding new cookies to add to my recipe collection, I was really excited to these Peanut Butter Fudge Bars from the Ultimate Cake Mix Cookie Book. I have to say, they turned out quite delish and will be included in my holiday tins this year!
Makes 3 dozen bars
Ingredients:
- 1 {18.25-ounce}package yellow cake mix
- 1 cup creamy peanut butter {I used crunchy}
- 2 large eggs
- 1/2 cup vegetable oil
- 2 cups semisweet chocolate chips
- 1 {14-ounce} can sweetened condensed milk {not evaporated}
- 2 tablespoons butter
- 1 teaspoon vanilla extract
Preheat oven to 350 degrees.
Grease or line 13×9 baking pan with foil
1. Mix the cake mix, peanut butter, eggs and oil in a large bowl. Blend for 1 or 2 minutes with electric mixer on low speed until blended. Reserve 1 1/2 cups of the dough. Press remaining dough into prepared pan.
2. Melt the chocolate chips, condensed milk and butter in a heavy saucepan set over low heat, stirring until smooth. Remove from heat and stir in the vanilla extract, then pour over crust. Sprinkle with remaining dough.
3. Bake 20-25 minutes or until golden brown and topping is firm to the touch. Transfer to wire rack and cool completely. Cut into bars.
While making these I wondered if I was supposed to follow the cake mix ingredients as well. I assumed not, so didn’t include them. My bars turned out delicious and the whole family loved them!
